THE STORY
The high desert juniper in this distillation is a true elder: twisted, slow, shaped by wind, its bark hanging in long gray ribbons and its branches heavy with dusty blue berries by fall.
Western juniper is the signature tree of Central Oregon, and out in the Badlands some have stood for more than a thousand years. The berries are cones in disguise, their scales grown soft and fleshy around the seed. In winter they feed the birds that stay: robins and waxwings, which will guard a single good juniper all season like a pantry.
Across much of the world, juniper has been burned for clean beginnings. Highland Scots sained their homes with its smoke at the New Year, and in the Himalayas it sits at the heart of the sang offering. The Dutch distilled its berries into genever, the English shortened the word to gin, and every gin since has carried the tree's name.
In the copper alembic the berries give up a water like a walk through the junipers after the first frost: pine-bright, peppery, a little sweet, with a few beads of oil riding the surface
